While I missed #NationalWatermelonDay last week since we were getting back from vacation, I still wanted to share this A-MAZE-ING watermelon smoothie my husband recently whipped up.
He has a knack for creating new concoctions on a whim. But when someone asks for one of his tasty treats, it’s not the easiest getting it translated onto paper.
I knew ‘just eyeball it’ wasn’t the kind of recipe you’d appreciate;)
So we went through and recreated it; but this time wrote down the steps and ingredients so you can enjoy it too!
Here it is!
This watermelon smoothie is simple to make and SO refreshing! It’s just perfect for these last few (and hot!) days of summer.

Ingredients for Watermelon Smoothie
- 4 cups of watermelon
- 1 cup cucumber
- 1/8 cup olive oil
- 20-30 mint leaves (about 5 sprigs) or to taste
- 1/8 tsp salt
- Zest of 1 lime
- Juice of 1 lime
What You’ll Need
How to Make
Place everything in a blender. We have a Vitamix. They’re great because they blend everything so well- nice and smooth!
Blend until everything is combined and smooth.
Add a handful of ice and blend again.
