Steel Cut Oatmeal in the Crockpot With the holid Steel Cut Oatmeal in the Crockpot 

With the holidays upon us and so many delicious foods to indulge in, I wanted to share a healthy breakfast idea that I make weekly: steel cut oats in the crock pot.

Steel cut oats take so long to cook on the stovetop.  So my husband and I came up with this recipe for a SUPER EASY way to make slow cooker steel cut oatmeal! 

This recipe makes approximately 6 adult servings or 7-8 kid servings. 

Add to the crockpot:
• 2 cups steel cut oats 
• 1/8 tsp salt 
• 5 & 3/4 cup water 

Mix everything together and put the lid on.  Set the crock pot on the ‘keep warm’ setting for 10-12 hours.  You may need to adjust the temp and cook time based on your crock pot. 

When the oats are cooked, add 1 tablespoon of butter, give it one more stir and then it’s ready to serve! 

You can cook them anytime; we’ve found it’s really nice to set the crockpot in the evening and wake up to a warm  bowl of oatmeal in the morning - a breakfast our whole family enjoys. 

Store the rest of the oatmeal in a container to enjoy later! 

This breakfast idea checks all the boxes for busy families:

✅ healthier 
✅ tastes good

We like serving this breakfast to the kids on school mornings because it keeps them full until snack or lunch time.  And they have fun helping to pick out the toppings. 

I love adding cinnamon, nuts and fruit - but the different combos you can make are endless!  Enjoy!

SPARKLING WINTER MOCKTAIL FLOATS Sparkling Winter SPARKLING WINTER MOCKTAIL FLOATS

Sparkling Winter Mocktail Floats: Mix sparkling white grape juice with cranberry or pomegranate juice and top with a scoop of sorbet for a bubbly and refreshing drinkable dessert.

Sparkling Winter Mocktail Floats:

Ingredients:
• 2 cups sparkling white grape juice
• 1 cup cranberry or pomegranate juice
• 4 scoops fruit sorbet (raspberry, lemon, or pomegranate)
• Fresh berries or pomegranate seeds, for garnish

Instructions:
• Divide the sparkling white grape juice evenly among 4 glasses, filling each glass about halfway.
• Slowly pour 1/4 cup of cranberry or pomegranate juice into each glass, allowing it to sink to the bottom and create a layered effect.
• Add a scoop of fruit sorbet to the top of each glass.
• Garnish the mocktail floats with fresh berries or pomegranate seeds.
• Serve the sparkling winter mocktail floats with straws and spoons.

As you enjoy the floats, the sorbet will gradually melt into the juices, creating a delicious and fizzy combination of flavors.

Feel free to adjust the ingredient amounts based on the number of servings you need and the size of your glasses.

EASY APPETIZER I’ve been making this easy aspar EASY APPETIZER

I’ve been making this easy asparagus appetizer for over a decade and it’s SO good! My kids even go wild for it! The crispy, salty prosciutto and melty cream cheese pair so perfectly with asparagus. 

Make this easy appetizer for a holiday dinner party, Thanksgiving dinner or anytime!  I always like to serve for a holiday or special occasion because even though it’s easy to make, it feels extra special for your guests.

I broil the wrapped asparagus on a parchment lined baking sheet for about 8 mins.  It will depend on the size of your asparagus or number of spears you use.  Enjoy!
